Black Bean & Corn Summer Salad

What you need:

  • 1 can (19 oz/540 ml) black beans, rinsed and drained
  • 2 cups frozen corn niblets, thawed
  • ¼ cup chopped fresh cilantro
  • ¼ cup lime juice
  • 2 medium tomatoes, chopped
  • ½ cup chopped onion
  • 1 tsp. ground cumin
  • ½ tsp. salt
  • ½ tsp. pepper

How to :

  1. Chop tomato and onion.
  2. Rinse and drain beans.
  3. Combine all ingredients in a large bowl. Serve.

For a better taste, refrigerate for at few hours before serving.
